In early 2021, we kicked off a Seafood Innovation Fund project working with Cornish chef and author, James Strawbirdge, to develop new recipes for two delicious – but under-loved species – megrim sole and spider crab, known locally in Cornwall as Cornish sole and Cornish king crab. Both are seriously tasty and seasonally abundant, but prices fluctuate and can be extremely low, and as much 95% of megrim sole is exported to Europe!

James’s rustic and colourful approach to home-cooking is enough to make anyone’s mouth water and belly rumble. For that reason, he was the perfect chef to experiment with these species and show off just how flippin’ brilliant they are to cook (and eat – of course.)
