Not many meals can double up as comfort food as well as impressive centerpieces for guests, but Seafood Cornwall’s crab spaghetti does just that. Whether you are treating yourself to some much-needed luxury or looking for a meal that hits the spot with family and friends , this deliciously simple classic uses the best ingredients to take you straight to the Cornish seaside.

Ingredients

  • 2 cloves garlic
  • 1 red chilli
  • Pinch of Cornish sea salt
  • 200g fresh white Cornish crab meat
  • 100g brown Cornish crab meat
  • 5 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 400g spaghetti
  • Fresh coriander and leafy greens (rocket, watercress, fresh spinach)

Method

  1. Put a large pan of salted water to boil for the spaghetti. When boiling, add spaghetti and turn down heat. Cook as per packet instructions, taking off the heat 1 minute earlier to keep it al dente.
  2. Create a smooth paste with the peeled garlic gloves, red chilli, and sea salt using a pestle and mortar. If you do not have one, use a blender.
  3. Add the brown and white crab meat, olive oil, lemon juice, and another pinch of sea salt and mix together.
  4. Drain spaghetti and place in large serving dish. Pour over crab mix while spaghetti is still hot, and then toss with the fresh coriander and fresh leafy greens. Serve immediately.
