Seafood CornwallThere are dozens of tasty fish species caught off the Cornish coast, so it’s time to try something new! Instead of always going for cod, why not choose pollack or gurnard?

With similar firm, white flesh and a delicate flavour, these fish work brilliantly in any recipe that calls for cod. Ring the changes with John Dory, with its sweet, moist flesh and fine, flaky texture.... or hake, which is more flavoursome and less bony than cod.

Spider crabs have a deliciously sweet taste, like a cross between ordinary crab and crayfish. Lobster has a reputation as a luxury food; it’s rich, satisfying flavour certainly deserves this, but you may be surprised at how affordable Cornish lobster is.

Fresh sardines are packed with flavour and are ideal accompanied by zesty relishes. Mackerel is equally tasty and is often hand-line caught, making it a very sustainable choice.
